Tomato and Roasted Garlic Pork stir fry





That name is a serious mouthful!.. and it may make the meal sound complicated but if I made it, then you all know its a dead simple and quick meal. You can have this meal with anything from rice to pasta or mashed potatoes.



Ingredients: Serves 2

2 Pork shoulder steaks (or any pork steaks)
1 Tablespoon olive oil
one clove diced garlic
half of a medium red onion sliced
sliced green, red and yellow pepper (as much as you prefer)
1 cup roasted garlic cooking sauce
1/2 teaspoon cajun spice
1/2 teaspoon ground coriander
4 tablespoons of a stir fry soy sauce.
salt to taste

Salad
Watercress, Spinach and Rocket salad mix
Cherry tomatoes
red onion (optional)

Cut the pork steaks into strips that are about 1cm thick, add the spices and salt and brown them on high heat in the olive oil. Reduce the heat and keep moving them around in the pan. Add the onions, garlic and peppers into the pan and fry all of this together until the onions and peppers become a little soft. Pour in the stir fry sauce and keep moving around the pan. You can add a little water just to make sure it's all not sticking to the pan or burning. Pour the cooking sauce in, stir and leave to simmer on low heat, stirring periodically for about 5 minutes.

If you don't have the cooking sauce I have used feel free to use any that you have on hand.

For the salad all you have to do is mix the ingredients together and add a salad dressing of your choice and VOILA...dinner's ready!
