Cheesy Tuna Cakes

These make for an awesome starter or light dinner served with a salad and they are very simple to make.


Ingredients: to make 8 fish cakes (serves 4)



2 160gram tins of tuna flakes
Half an onion-finely diced
Green, red and yellow pepper-  finely diced. (amounts may differ because of size of the peppers so go according to taste or preference)
1 cup grated cheddar cheese
1 beaten egg
1 cup mashed potato
1 slice bread- torn up into small pieces
Salt and pepper
Dried mixed herbs

Method:

Drain the tuna well and mix everything together and season with the salt, pepper and mixed herbs.
Divide the tuna mixture into 8 parts and form patties. Arrange them on a plate, cover with cling film and leave in the fridge for 20 minutes to make them more firm.

Preheat 4 tablespoons of vegetable oil in a pan on medium-high heat. Lightly dust either side of the patties with flour before putting them into the pan. (Make sure to dust off the excess flour). Fry the patties for about 10 minutes on either side or until they are golden brown. Make sure you do not move them around to much in the pan so that they do not break up. Add a little oil as needed while you are frying.
