Sweet and Sour Chicken Stir-fry | Recipe

If you have veggies that you need to get rid of before they go bad, and you don't want to fuss for too long in the kitchen, this recipe is perfect. I made this whole meal in less than 30 minutes. And it's so healthy and delicious!!!
Because stri fry are made at high temeperatures, it helps to prepare everything before you start.


Serves 2

2 chicken breasts or deboned chicken thighs- cut into bite size chunks
1/2 onion
Bell peppers- 1cup sliced 
4 cloves garlic- diced finely
1 tsp ginger- diced finely
1 tbsp chicken spice
salt and pepper
1 tbsp plain flour
3/4 cup sweet chilli sauce

Vegetables- whatever you have in your refridgerator
I used:
1 handful green beans cut in half
1 handful sliced courgettes
1 handful snowpeas

Method:

Put the chicken in a bowl and sprinkle the salt and pepper, chicken spice, and plain flour. Mix it all very well.
Heat 2 tbsp of vegetable oil in a large pan and put all the chicken in one layer to brown.

When the chicken has browned and just cooked through, put in the onion, ginger, garlic and pepper and fry for a few minutes or until the onion are starting to soften.

Put the rest of the vegetables in and keep everything moving in the pan. Pour in the sweet chilli sauce and mix it in with everything. You can use a little water to create more sauce if that is what you prefer.

Make sure you don't overcook your vegetables, no one wants soggy veggies.

Serve with fluffy white rice and enjoy a stress-free meal!
