Baked Samosa | How-to and Recipe

Samosa dough Recipe : 12 samosas.
2 cups plain flour
2 pinches salt
5 tsp vegetable oil
3/4 cup water

Sift the flour and salt into a bowl and add the oil and water. Mix until a stiff dough forms. Knead for 1 minute to make sure all the flour is incorporated. Wrap the dough in cling film so that it doesn't dry out and leave to rest for 30 minutes.

Divide the dough into 6 equal parts. Roll it out and make sure you can get 2 samosas from each piece. It needs to be rolled out very thinly to ensure it's lovely and crisp when baked or fried.
You can follow the folding pattern below:

For the filling:
300g minced beef
1 cooked mashed potato
1/2 cup finely diced onion
1/2 cup finely diced peppers
3 cloves crushed garlic
salt & pepper to taste
1 tsp cajun spice
1 tsp parika
1 tsp hot curry powder
2 green chillis - deseeded and finely chopped
1 pinch sugar

Put the minced beef and spices into a hot pan and brown over medium high heat. Add the onions, peppers, garlic, salt and pepper, chillis and the pinches of sugar. Fry everything together until the onions and peppers are starting to soften. Take it of the heat, mix in the mashed potatoes and leave to cool before wrapping.

Bake at 190degrees C for 20 to 25 minutes or until golden brown.

Serve with a mint and yoghurt dip and enjoy!
