Chicken Fried Rice | Recipe
This Chicken Fried rice recipe is a great reason to stay away from ordering Chinese and making this yourself at home.
Serves 2
Ingredients:
3 cups cooked cooled rice
2 small chicken breasts
1/2 cup diced onion
3/4 cup diced carrots
3/4 cup steamed brocolli
2 cloves finely chopped garlic
1 beaten egg
salt
pepper
4 tbsp cup light soy sauce
Cut the chicken up into pieces that are about 2cm big and season with salt and pepper. Heat 2 tablespoons of vegetable oil and brown the chicken until it's crispy and golden-brown. Take the chicken out and set aside.
In the same pan, fry the onions, carrots and garlic until tender. Take the vegetables out and set aside.
Again, in the same pan, scramble the egg making sure to break it into small pieces. Add back the vegetables, chicken and steamed brocolli and pour in half of the soy sauce and stir everything together. Add the cooked riced and stir to make sure its all well combined. Pour the rest of the soy sauce, stir and taste for salt and pepper, add more as needed.
And you're done!
