 Bread making can be so therapeutic- almost addictive, especially when you know that the result of all your hard work (kneading) will be worth it and delicious. These rolls are everything you want from a home-baked batch of bread rolls. What's even more exciting is knowing that you can make any shape buns, so here's a way of releasing your creativity! :)
 



Yield: 9 dinner rolls

3 cups strong bread flour
1/2 tsp salt
1 tbsp melted butter
80 mls warm water
3 tbsp sugar
150 ml milk
1 1/2tsp dried yeast

Activate yeast by mixing warm water, 1tsp sugar and the yeast and leaving it to become frothy. About 10 mins.
Mix the rest of the dry ingredients in a separate bowl and create a well in the middle of flour mixture.
Pour in the activated yeast, butter, and a little bit of the milk. Mix it in to form a dough that you should be able to knead with your hands. If the dough is way too sticky to handle, add a little bit more flour and if its too dry add a little milk.
Time to work out : knead the dough for 12 to 15 minutes. This is really important. You can do this kneading in a stand mixer as well.
Put it in a bowl and cover with cling film or wet towel to rise. Between 30 and 45mins or until it has doubled in size. When rising put bowl in a warm draft-free place. Eg microwave or oven or warmer.
When it's risen, punch out the air, knead for a minute and divide into little rolls or buns depending on what you're making. Place them in a greased baking tray and leave to rise for about 30 mins again or until double in size.

Gently brush tops wih milk before baking.
Then bake at 180degrees C for about 20mins or until cooked through.

Brush the tops with sugar syrup while they are still warm.
For the sugar syrup, using very war/hot water, mix equal parts of the water and sugar until it has dissolved.
