Sweet Wholewheat Rolls

I love sweet breads, they are such an indulgent treat for me. I had to find a way of enjoying them with a little less guilt and using wholewheat flour allows me to do just that.


Ingredients: makes 12 rolls



2 1/2 cups wholewheat strong flour
2 1/2 cups plain white flour
2 tsp yeast
6 tbsp sugar
1 1/2 tsp salt
200ml warm water
250ml milk
3 tbsp melted butter

Method
  1. Mix the yeast into the warm water with 1 tablespoon of the sugar. Cover, and leave in a dark for 15 minutes- it will become frothy and you'll know the yeast is active. This step is very important.
  2. Mix the flour, salt and the rest of the sugar.
  3. Whisk the room temperature milk and melted butter together.
  4. Pour the yeast mixture and the milk mixture into the dry ingredients and mix until it all starts to clump together.
  5. Using your hands combine everything into a dough that you can knead. Add a little warm water (3tbsp) as needing while u knead the dough.
  6. Knead for 20 minutes by hand on a floured surface or approximately 7 minutes using a stand mixer.
  7. Put the dough in an oiled bowl and cover. Leave in a dark draft free place for 1 1/2 hours or until it has doubled in size.
  8. On a lightly floured surface, knead the dough to get the air out. Shape 12 balls out of the dough.
  9. Place them on a greased baking tray, about 1 cm away from each other.
  10. Bake at 190 degrees C for about 20 minutes.
  11. When they are done but still warm brush the tops with sugar syrup (mix equal parts sugar and some hot water)
  12. When the syrup is dry, sift some icing sugar onto the rolls (optional). 
  13. Serve immediately
 NB: If you don't finish them on the day you made them (which will be hard!), store in an airtight container and then microwave for a minute when you need to serve them.
