Honey and Mustard Chicken

This recipe is perfect for any occasion and it's so easy to put together too. I have tried different ways of making this chicken, but this is by far my favourite and I thought I'd share.


Ingredients:



1 small full chicken cut into pieces. You can also use just drumsticks, thighs or breasts.
1/2 cup honey
1/4 cup dijon mustard
2 tbsp oilve oil
2 tbsp freshly squeezed lemon juice
1/2 teaspoon coriander powder
1 onion cut into big pieces
2 cloves garlic finely chopped
1 tbsp soy sauce
Black pepper and salt

Method
  1. Season the chicken with salt and pepper and set aside. 
  2. In a seperate bowl, whisk the rest of the ingredients until well combined.
  3. Reserve about 6 tbsp of the marinade in a cup for basting later.
  4. Pour the rest of the marinade onto the chicken and rub it in well. Leave to marinade for an hour.
  5. Place the chicken pieces and onion pieces onto a baking tray. Pour a little of the marinade over the chicken, cover with foil and bake at 200 degrees C for 30 minutes.
  6. Put the chicken underneath a broiler for about 15 to 20 minutes to brown, basting and turning over every 7 minutes using the reserved marinade.
  7. Keep a close eye as honey can burn quite quickly.
This chicken is can be served with mashed potatoe or rice.
