Tagliatelle with Creamy Tomato Sauce and Meatballs | Recipe

With classes and just life in general being in full swing now, I have been enjoying really quick, easy meals. And pasta dishes are definitely a great way of having dinner in minutes. I have a delicious meatball recipe that is perfect for pasta so in this post I am only going to share how i made the pasta sauce. Click here for meatball recipe.


Ingredients:



1 can tomato chunks
1/2 of a large finely diced
3 cloves garlic minced
2 small sweet pepper  diced
2 tsp fresh chives
1 tsp fish sauce
1 tbsp soy sauce
1 tsp dried herbs
cajun seasoning
olive oil
1 stock cube
1/4 cup heavy cream (optional)
salt and pepper
pinch of sugar

method:

  1. Heat about 3 tbsp of olive oil on medium heat, add the onion and saute for approximately 5 minutes. Add the garlic and saute for a further 3 minutes.
  2. Add the sweet peppers and saute for 5minutes until they are soft.
  3. Pour in the tomatoes, mix in well and leave to simmer stirring occassionally. It should reduce by about half.
  4. Add the fish sauce, soy sauce, herbs, cajun seasoning, and cook for 5 minutes then sprinkle a generous
    pinch of sugar.
  5. Dissolve the stock cube in 1/4 cup of water and then pour into the sauce. Leave to simmer allowing the sauce to thicken up. (PS. Depending on what brand of stock cube you used, you will need to adjust the amount of salt and pepper you use.) Taste and season with salt and pepper as needed.
  6. For a smooth sauce, blend for a few seconds, pour back into the saucepan, add the heavy cream (optional) and stir on low-medium heat.
Put the cooked meatballs into the sauce and leave to simmer for a few minutes and then pour over the pasta.
Serve with a grating of your favourite cheese. I used greek feta cheese, but you could also parmesan cheese.
