Ingredients:
3 large eggs
1/4 cup milk
1 tsp fresh roughly chopped coriander
salt and pepper
6 slices of bread
greek feta cheese to crumble over the top
Method
- Whisk the eggs, milk, coriander, salt and pepper in a shallow bowl.
- Heat some oil in a non-stick pan.
- Dip the bread into the egg mixture quickly, don't allow it to soak too much of the egg.
- Fry over medium heat until golden-brown on both side.
- Crumble some feta cheese over the top of the toast and drizzle with some syrup and a little more fresh coriander if desired.
