1kg chicken wings cut into wingette and drummette
salt and pepper to taste
2 cups sweet chilli sauce
1 chilli diced (adjust amount depending on your preference and how strong the chillis are)
1 tbsp soy sauce
1/2 cup lime/lemon juice
Method:
- Line an oven tray with aluminium foil.
- Season with salt and pepper and arrange the chicken on the tray allowing some space between each piece.
- Bake in the oven at 200 deg C for about 30 minutes or until they are cooked through and slightly golden brown.
- Mix the sweet chilli sauce, chilli, soy sauce and lime/lemon juice in a seperate bowl large enough to hold the chicken.
- Put all the chicken into the sweet chilli marinade sauce and toss ensuring all the pieces are covered.
- Put the chicken back onto the oven tray and broil/grill for about 10 minutes until the wings are slightly crispy and the sauce has caramelised.
