I've been thinking what food is reminiscent of spring and summer and somehow pizza came to mind. So I thought I would share my recipe for mini pizza. This recipe can be adapted to your needs, so you can make many small pizzas or one large one to share with family and friends.
Secret to a delicious pizza is in the pizza sauce you use and I have tried countless times to make my own sauce. I'm so excited to say that I think I may have nailed it this time!
For the Pizza sauce: 2 mini pizza (15cm diameter)
1 1/2 cups grated tomatoes
2 tbsp tomato puree
1tsp dried herbs
1/2 tsp paprika
salt and black pepper
2 tsp minced garlic
1/4 cup diced onion
pinch of sugar
1tbsp dark soy sauce
Method
1. In a saucepan, saute the onions, garlic, dried herbs and paprika on medium low heat until the onions are soft.
2. Add the grated tomatoes and tomato puree and cook the tomatoes for about 5 minutes stiring to make sure that everything is well mixed.
3. Season with salt and pepper, a pinch of sugar and add the dark soy sauce.
4. Taste and add more seasoning if needed.
5 Leave to simmer softly for 10 minutes and then turn off the heat. if the sauce looks too thick, add a little water while it simmers.
For these pizzas, I chose to use some chicken, peppers, red onions for my topping. You can use anything you have on hand, and this is also a great way to use up any left over grilled meat you may have.
For the Pizza dough, I made my own and I will post the recipe soon but store bought dough will work just fine.
Making the pizza:
1. Follow instructions on the pizza dough packaging and roll out 2 small pizzas.
2. Spread some of the sauce on top then add whatever toppings you have eg. mushroom, peppers, onions, meat etc
3. Put a little more sauce on top of that and bake at 190 degrees C for about 15 minutes or until the bottom is slightly golden.
4. Grate some mozarella and cheddar cheese on top and add a little more of the sauce if desired.
5. Put under a hot broiler/grill for approximately 5 minutes or until the pizzas are golden on top and the cheese has melted.
Whoever you are making these for won't wat to leave you! They taste So good!
