Making a curry can definitely turn a potentially boring or bland meal into something exciting. Beans have always been one of those things I found quite uninteresting until I started making them like this. I love sugar beans now and I always have them with chapati which is a perfect accompaniment for the spicy beans.
1 cup uncooked beans (soaked overnight)
1/2 average size onion
3 cloves garlic
1/2 tsp ginger paste
1 cup grated tomatoes
2 tbsp tomato paste
1/2 tsp paprika
1/2 tsp cajun seasoning
1/2 tsp curry powder
chilli powder (optional)
1/2 tsp powdered coriander
1/2 tsp cumin
2 tbsp dark soy sauce
1 tsp corn starch (if necessary)
Method
- Boil the beans in salted water for about 30 mins or until they are cooked and soft then drain and set them aside.
- In a deep saucepan, saute the onions for a few minutes then add the garlic and ginger with all the spices.
- Fry all of this together for about 5 minutes on medium heat.
- Pour the grated tomato and tomato paste into the pan and continue to cook until the tomatoes have reduced.
- Add the dark soy sauce and mix it in well. Pour in a little water and let the sauce simmer for a few minutes. It should be quite thick but if not, mix the corn starch with a little water and add to the sauce.
- Add the cooked beans and combine everything well. Leave to simmer on low heat for approximately 10 minutes and then serve.
