I had quite a bit of mint around and I was really struggling to find ways to make use of it (I hate throwing things away). Coincidentally, I also had some tilapia and decided to give this a try and I must say I am SO happy with how it turned out. Here's how I did it:
For one average sized fish ( enough for 2 people)
Marinade:
1 heaped tsp mint sauce
1 tsp granulated garlic
1 tsp mixed herbs
sprinkle ground black pepper
light sprinkle of salt (be careful when adding salt because the soy sauce can be quite salty too)
1 tsp chilli powder
1/4 cup soy sauce
1/4 cup olive oil
Method:
- Mix all the marinade ingredients together and pour over your prepared and cleaned fish.
- Rub in the marinade making sure to get it into the fis cavity as well.
- Cover and leave to rest for 15 minutes.
- Lightly grease a grill pan and place the fish onto it.
- Grill fish for about 20 minutes on either side (depending on how big it is)
I hope you give this a try. This can be done on whole fish as well as deboned fillets if that is what you prefer.
