Sticky Barbeque Ribs

Who doesn't love delicious sticky, well marinated ribs?!

Here's a simple recipe and as usual, feel free to customise it and make it your own with your favourite seasonings and sauces.




500g baby back ribs. (This cut is so tender but spareribs will also work for this recipe)
1tsp fresh thyme finely chopped
1/2 teaspoon oregano
1/2 tsp paprika
1 tsp garlic granules
salt and pepper
2 tbsp soy sauce
1/8 cup olive oil
lemon juice (half a lemon)
2 garlic cloves roughly chopped
2 tbsp scotch bonnet pepper diced.

Sauce:

2 tbsp honey
4 tbsp barbecue sauce

Method:

1. Mix all the spices and pour over the ribs.
2. Pour the olive oil, lemon juice and soy sauce on the ribs with the garlic and diced pepper.
3. Mix everthing to make sure it is well coated in the marinade. Refridgerate for at least 5 hours but its best if you leave them overnight.
4. Steam the ribs in half a cup of water for about 15 minutes on medium heat.
5. Arrange the steamed ribs on a grill pan and grill until they caramelised.
6. Add the honey and barbecue sauce to the remaining sauce from steaming the ribs. Mix on medium-low heat. Add half a tsp of corn starch (mixed with a little cold water) to thicken the sauce and use this to baste or brush over the ribs as they grill.
