How to Preserve Fresh Herbs

I always avoided buying fresh herbs when trying out recipes. Its because since moving away from my mom's little herb garden, I hated spending money on a big bunch of herbs and only using a small amount and throwing the rest away. Since the beginning of he year, however I have found a way to preserve them so that I can use them over a longer period of time and essentially get my money's worth.

I've been freezing my herbs and i find that although they don't look nice and crisp when you defrost them but the flavour is definitely preserved. They can be used in pestos, wet rubs or marinades, soups and stew recipes.

Step 1: Chop up the herbs up as though you were about to use them.

Step 2: Wrap the herbs in cling film

Step 3: Seal the herbs in removing as much of the air as possible.

Step 4: Label the little packs and freeze inside an airtight ziplock bag.

There are other methods that are available when freezing but so far this is the one i have tried and found to work very well for me. I really hope this helps someone and gives you encouragement to venture into buying and using fresh herbs.

Much love,

xo
